How to Cook Grits
Howdy friends,
There are plenty of variations but here's how we cook Carolina Grits.
Classic Carolina Grits
(1 cup of dry grits = 3 to 4 servings)
1. Use a medium size pot (2 qt is great)
2. Combine 1 cup Carolina Grits + 3 cups of water + 1/2 tsp of salt (or to taste)
3. (optional) - Stir & skim off the floating germ with a spoon or small strainer
4. Bring to a boil. Stir occasionally to keep from sticking.
5. Drop heat to a low simmer and stir. (be careful - grits can splatter)
6. Cover and cook on Low for 30-35 minutes. Stirring occasionally.
- Grits can sometimes stick to the bottom of the pot especially if the heat is too high.
- Use a spoon that can get into the corners of the pot when you stir.
Notes: Wait to add butter or cheese until the very end.
If grits are too thick -- stir in a little hot water or broth to thin.
High Altitude: you'll likely need to increase cooking times.
Variations are limitless.
But here are a couple of ideas:
1. For an extra savory touch, substitute chicken or veggie broth/stock for some of the water.
2. For a rich and creamy twist, use 2 cups water and 1 cup milk or cream.
